Sweet Tooth-Ice Cream Dessert

So I decided to try another new recipe. This time I was craving something a little sweet. So I turned to Pinterest of all places and searched through my desserts and sweets board. I came across an ice cream dessert that only had three ingredients and I had all three in my bare fridge and cupboards, which was pretty surprising. A lot of times I take a recipe and this one would have taken a couple hours to be able to eat, but I wanted it NOW. So I altered it a bit so I was able to snack on it that night. It was called Nutella Ice Cream Crunch Cake and you can find the link here.  

I started with melting a little peanut butter and Nutella in a bowl. 
After it was a little melty I mixed in enough rice crispies to coat them all. Here's where I altered the recipe. Instead of waiting for them to dry out, I just stuck them in the ice cream and started mixing. My ice cream turned a little chocolately, but I don't have a problem with that! 
I did make some to share with others which I spread in a pan and topped with more chocolate covered rice crispies, but the rest Tyler and I ate out of the big bowl! It was quite the yummy dessert and super easy to make! I'm not a big fan of measuring out things and I just add things as necessary. If you want more crunchies, add some more! More peanut butter, less Nutella, the options are up to you!

Cottonwood Coming Home Days

This weekend in my hometown and also my current town was out town days. So it was a weekend full of fun and festivities. However, it was still a weekend full of baseball with Tyler. We had a street dance both Friday and Saturday night, which was different because normally it's just Saturday night. Saturday was also the parade and that's always a fun time just to see everyone in the area come out in the parade. I was busy trying to get all my homework done for the week, which now I found out that some wasn't even due until this week! But now I'm ahead of the game. Saturday after the parade was the fire mans supper, which is always delicious. After the supper and big group of us went over to the other Milroy baseball team at night to support one of their players and his family for a benefit they were having. We didn't stay for the whole game, but by the looks of it when we left, they were going to win. We headed back to cottonwood for round two of the street dance. I had such a good time catching up with all my classmates that came home for the weekend! Here are just a few snapshots from the weekend. My best friend in even came and surprised me! 
It was a great weekend and it makes me miss some of those that I haven't seen in a few years!

Field of Dreams

This last week there was a great article written on The Irish Yard, which is where the baseball team that my boyfriend plays on. Of all places it was found in the Senior Perspective newspaper, a free newspaper and I don't even know where it prints. My mom found it and showed it to me and I brought it to Peggy and Bob, the coach and his wife. They already had some copies, but they will take as many as they can get. It goes into detail about the history of these baseball teams in Milroy and how they split and created two different teams. There are a few pictures of the field and just talks about how hard we have all worked, family, teammates, and friends, to create this field and make it what it finally is, and we still aren't done with future plans! We have lights that will go up in steps over the next year. I have many pictures that I have taken there and in the summer I spend more time there than I do at home. It really is a field of dreams and I wouldn't think of any other way to spend my summer. I go to every game and work in the concessions with other friends and girlfriends. I can't even express how proud I am of this family and everything they do for everyone to make these dreams happen. They have worked so incredibly hard and I am proud to say that I am apart of it all and they have taken me in as one of their own. If you haven't been out to the field or don't know what it is, just take a drive down highway 19 one night and turn down Dayton Ave just before Vesta and just pull in and look around. Even if you're not a baseball fan, I think you will still appreciate it and understand how much hard work has truly gone into making this family's dream a reality!

Painting Class

This week was a week full of fun and craziness! I enjoyed every minute of it though. I don't know what I would do if I were ever bored, except I know if I had a second to relax I would just watch TV.

One of my new experiences this week was I decided to go to a canvas painting class that was held by some friends of mine at work. I had heard that these were fun and wanted to give it a shot! It was just in the basement of the church right across the street and there were about 25 people there, which was much more than they were expecting. There was a lady that came in from Pipestone to teach the class. She brought all the supplies that we needed and when we got there she showed us the options that we were able to paint. We got to pick our paint colors, depending on the colors that we wanted our flower to be. I chose my flower to be yellow/orange and my background was dark blue. 

She took us step by step through each part of the flower and painting. She would give us a step and then we could do it ourselves on ours and she would walk around to see if anyone needed help. Once we got into our paintings, I found it SUPER relaxing. I pretty much only focused on my painting and didn't even notice everyone around me. I can see how it would be addicting to do and would probably enjoy it more or do it more if I had the time. It always seems to come down to time.

Vacation: First Nice Day

As you can tell from my last post, on our first nice day here we went fishing. However, this resort has a lot of different fun things to do here! This is what we all got to do yesterday.

A little sunset peddle boat fishing with Tyler. Until the bugs got too bad of course! Which didn't take long to do. 


The day before was also my birthday (July 1 at 23 years old!) since it was crappy out we went into the tiny town of blackduck that actually had a bowling alley and we went bowling and ate delicious pizza! 

We've got two more days here at this resort and we are hopefully going to make the best of it with the warm weather that is ahead of us!!

Vacation: A Day Full of Firsts

I am on vacation this week with Tyler and his family in Black Duck, a lake about 28 miles north of Bemidji. We got here late Sunday night and came to some pretty crappy weather. It was cold and rainy for 2 days when we got here and it had been like that the two days before we got here too. Yesterday was finally a nice day to get out and enjoy some fishing, kayaking, and peddle boating. While out fishing in the morning we were having some pretty good luck with northerns. I caught a good sized one, the biggest at that time, that we kept to clean later. It was a 24" about 3 lb northern. I even baited the hook with a leach. I did not take it off the hook, however, but baby steps! When we were headed up to clean them I even held him outside the fish house. I figured if I did it by the water he would flop out of my hands and back into the lake. While Tyler and his dad were cleaning the fish I normally help by cleaning all the blood off the meat the cut off. I asked Tyler if I should clean my big boy and of course he said yeah! He's been asking if I wanted to clean a fish forever but for some reason today I just wanted to call that fish my own, start to finish. I had watched Tyler clean enough fish to get the just of it and he helped me for a little bit, but I didn't need much guiding! I actually did a really nice job and got some nice fillets from my fish. When I was done there was still one more fish to clean and I said "gimme" and did that one too! I felt very accomplished that I had done it all by myself. Big day!
